For the Love of Pizza...

The Pizza That We Made...
Fresc Co, one of the well-known international Italian restaurant chains is running Napolitano Pizza festival in the capital, and they recently invited the food bloggers to one of their restaurants to give a first-hand experience of pizza-making. Take a look!

It was a fun evening at their cozy casual dining space. While pizza and the love for Italian cuisine in India is nothing new, and there are a lot of other Italian restaurants that keep running some food festival or the other, but this one was quite different. Not because it was all about pizza-making learning, but primarily because this particular pizza - Napolitano, inspired from the Naples region has a different concept. We asked Ankit Mangla, Brand Chef , Fresc Co, to brief us about this pizza. "If you have been used to loads of toppings on your pizza, which is so very American style, this pizza demands bare minimum toppings, and therefore it's all about the crust and the cheese (see pics above). So, if you go wrong with the pizza base, chances are that you have spoiled your pizza already,"said Mangla.

Dough for Pizza-making
 Pizza-making is sure an art, and the base of it lies in the dough that we prepare to make the base. If you thought that it only has to be the fine flour, then you'll be surprised to know that a pizza base can be in multi-grain and wheat as well. Each one differ in texture and taste. The dough is prepared by adding yeast and balanced portion of water, and left in that state for an hour. This makes it soft and stretchy. The dough balls then are spread in an artistic way to make a fine pizza base, followed by spreading the sauce, the cheese, and the toppings of your choice. Once it goes in the oven, all you need to do is wait for another 20-25 minutes before the hot & tasty pizza is all there for grab!
