” Gluten was never a must in our diets. I would rather call it a monster. Gluten was needed only to make our breads softer. Today, with the help of it along with chemicals and preservatives, the very appearance of bread is manipulated. It has been made to look better, last longer and not go stale. Beller appearance means that the nutrients have been compromised on. And, women must not fall for the looks but the quality,” said Food Expert & Consultant Sangeeta Khanna during the Gluten-free Hi-tea Recipes culinary session of The Imperial Culinary Club in the capital city recently.
She further added that a lot of people have serious intolerance to gluten, and in some cases one may not even notice and get an indication but the presence of gluten in the diet would eventually affect the overall immune and strength. ” Food is a biggest change-maker, not just in terms of health but also environment. Wheat is a cash-rich crop and easy to grow and for this simple reason, millets that are gluten-free have taken a back-seat,” she summed.

As The Imperial Hotel in the capital made sure to revive its importance and health benefits and thus, organized an interesting culinary session of The Imperial Culinary Club, where the focus was hi-tea recipes based on buckwheat, ragi, quinoa, amaranth and chestnuts… all 100% gluten-free key ingredients.
We are sharing one of the recipes here for you to try and taste, of course..
Amaranth, Carrot, Raisin Cookies
Ingredients: Amaranth flour (2 cup), Baking Powder (1 tsp), Salt & ginger (1/2 tsp each), Cinnamon (1/2 tsp) Cardamom (1/8 tsp), Sugar (120gms) Melted Butter (1/4 cup), Maple Syrup (1/4 cup), Grated Carrots (1 cup), Chopped Walnuts (1/2 cup) Raisins (1/4 cup)
Method: Preheat oven to 375 degrees. Mix amaranth flour, baking powder, salt, ginger, cinnamon powder in a large bowl. Then in a medium bowl, add sugar, maple syrup, melted butter until smooth and then stir in carrots. Mix wet and dry ingredients together with a spatula and then gently stir walnuts and raisins. Using the palm of your hands, flatten the cookies in a 1/2 inch thickness in medium size. Place then closely over the silpat and bake for 12-15 mins. Remover and allow it to cool.
